Baked spicy chili sauce

Don't like to make your food to spicy when cooking? Why not make your own spicy chili sambal sauce then? Place it on the table and everybody can add it and spice up as they please.


At the Food Forest Kitchen Restaurant @Ecologicthailand you will always find a little bowl of our spicy sambal on the table.



 

Baked Spicy Chili Sambal Sauce

Prep time: 45 minutes (if you use mortar and pestle)

Cook time: 15 minutes Total time: 60 minutes Serves: 100 cl


INGREDIENTS

  • 1 cup fresh red chilies, cleaned

  • 1 cup fresh garlic, cleaned

  • 1 big onion, chopped

  • 1 whole lime leaf (aka kafir leaf)

  • A bit of salt

  • 1 tablespoon tamarind (the meat of the fruit or you can also use paste)

  • 3 tablespoons vegetable oil

  • A bit of water

  • 1 table spoon sugar cane sugar

  • 1 table spoon salty soy sauce


EQUIPMENT

  • Saucepan

  • Whisk

  • Spatula

  • Measuring cups

  • Hand mixer or fork

  • Glasses for serving

INGREDIENTS

PREPARATION

  • Puree the onion, chili and garlic in the mortar and pestle until they are very fine (if you want use a hand blender)

  • Sterilize your jars (hot water)


METHOD

  • Add the oil in your pan on a low heat and let the oil warm

  • Scoop the mix from the pureed mix in the pan

  • Add the lime leaf, the tamarind, the sugar, the salt and the soy sauce

  • Start stirring and keep stirring for approx. 10-15 minutes

  • Add a bit of water (1 tablespoon at the time) if necessary

  • The sambal will darken more and more

  • Keep stirring

  • The sambal is ready when the oil comes on top of the sambal.

  • Take the pan of the heat

  • Allow to cool, taste

  • Store in airtight containers

  • Keep your sambal in the fridge until used


NOTE: If your sambal is too spicy you can add some more sugar. If you like to make a lesser amount, adjust the ingredients to the desired amount.

  • Pain. Topical creams with capsaicin work as an analgesic and can be used to help with arthritic pain.

So, start making that sambal and eat a bit more spicy food!
