Kumquats are the smallest citrus fruit that we grow on the premises of the Thai Child Development Foundation and Eco-Logic Thailand. We have quite a number of trees that produce these lovely sweet and sour tiny fruits. We squeeze them (which is a labor of love) and use them at the bar of the Food Forest Kitchen Restaurant for mixes and for this creamy smoothie with banana, coconut milk and kumquat juice.
VEGAN COCONUT BANANA GINGER SMOOTHIE

INGREDIENTS
1 1/4 cup coconut milk
1 frozen banana
3 crushed ice cubes
1 passion fruit
EQUIPMENT
Blender
Glasses
PREPARATION
Freeze the banana (remove peel before freezing)
Make your coconut milk
Get the passion fruit seeds
Crush the ice
METHOD
Put all ingredients in blender and blend until smooth.
Pour into glass and garnish with mint
Serve
