Vegan banana creamy pudding is a delicious, jammy pudding.
At the Food Forest Kitchen @Ecologicthailand we serve it in small shot glasses on a bed of cookie crumbles, and as a stunning delicious pie!
VEGAN BANANA CREAMY PUDDING
Prep : 10 min Cook: 20 min Ready in: 3 hours Serves: 8
INGREDIENTS
2 Tbs cornstarch
1/3 Cup of sugar
1 Pinch of salt
1 ½ Cup of coconut milk
1 tsp Vanilla
2 ripe Bananas
A squeeze of lime juice.
Mint leaves and/or a couple of slices banana for decoration
EQUIPMENT
Saucepan
Whisk
Spatula
Measuring cups
Hand mixer or fork
Glasses for serving
PREPARATION
Puree the bananas with the hand mixer or fork Add a squeeze of lime juice to prevent discolouring
METHOD
Mix the cornstarch, sugar and salt in a saucepan
Add the coconut milk slowly and whisk
Place on a medium heat and keep whisking until the pudding starts to boil
As it starts to boil,, lower the heat and continue cooking for 4 minutes whisking constantly
When the pudding starts to ‘jiggle’, add the vanilla and the pureed banana.. Stir well and continue cooking for a couple more minutes. Scrape the pudding from the pan walls and stir through.
Remove from heat and while hot spoon the pudding into the glasses
Set for 2 to 3 hours in the fridge.
Decorate with mint leaves and serve.

At the Food Forest Restaurant we use the leaves for decoration on the tables, to wrap our take away lunches in. The core of the tree is edible and is used to make a delicious curry. Last but not least: the flowers of the banana are beautiful and can be used to make an amazing salad!!
And of course we can eat the banana's themselves, we have a variety of them in our food forest and they are used for making shakes, our world famous banoffee desserts, they can be made into chips and used as a vegetable when young and green. Every body knows the famous Thai banana pancakes!
We also make pudding with banana's: as a dessert for “the Forest Food Kitchen” restaurant . We only use homegrown and local produce and make our own coconut milk! It is incredible to be able to walk out in our food forest and just pick a bunch of bananas from a tree or get a coconut to grade for making coconut milk! Fresh and pure nature! Delicious! We are blessed and lucky to be able to do that. Of course you can use store bought products too :)
