Super Easy Vegan Pie Crust

For all those delicious Thai quiches and pies we serve at the Food Forest Kitchen restaurant we use this vegan pie crust as a base. Easy to make and a great base for pumpkin pie, banana pudding pie, papaya pudding pie. Make the crust big or make a number of small ones. The crust can be pre-baked and kept in the freezer if you want to have some in stock.




 

VEGAN EASY PIE CRUST

Prep : 15 minutes - Pre-bake for a cold filling: ca. 40-45 minutes - Pre-bake for a quiche or pie: 6-8 minutes Bake with pie: : 40-45 minutes - Ready in: 1 hour - Makes: 2 medium pie crusts


INGREDIENTS

  • 1 1/2 cup of flour

  • 1/2 teaspoon of salt

  • 1/2 cup of coconut oil

  • 4-6 tablespoons ice cold water

EQUIPMENT

  • Bowl for mixing

  • Pie pan

  • Fork

  • Measuring cups

  • Rolling pin

  • Baking paper (big enough to fit in your pie pan)

PREPARATION

  • Place a cup of water in your freezer to make sure it is ice cold before making your crust (5-10 minutes will do)

  • Preheat your oven to 180 ° Celsius


METHOD

  • Mix the flour and salt

  • Add the oil to the mixture

  • Use a fork to mix all together; the mix will look like fine crumbs

  • Stir in 1 spoon of ice cold water, mix

  • Add the water, spoon by spoon while mixing, until it holds together and the dough is forming

  • Continue mixing, use your hands to make the dough

  • Roll the dough into a ball

  • Spread the baking paper with some flour on your counter

  • Use a floured pin (or your hands) to flatten out the dough to the size of your pie pan

  • Transport the dough (and the baking paper!) to your pie pan

  • Press the dough up to the sides

  • Poke some holes on the bottom with a fork

  • Pre-bake for 6-8 minutes if you want to use it to make a baked pie or quiche.

  • If you want to bake the crust for a cold filling (pudding or fruit), you can bake the crust for 40-45 minutes until golden brown
