Pancakes..........the ultimate breakfast for young and old. Or a great snack in between meals. Or dessert. Try these delicious vegan pancakes. Easy to make, ready in no time! VEGAN PANCAKES Prep : 5 min Cook: 10-15 minutes Ready in:half an hour Makes: 6-10 pancakes INGREDIENTS 1 cup flour 1 tablespoon sugar 1 tablespoon baking soda 1/4 teaspoon salt 1 cup coconut milk (make your own with this recipe) 2 tablespoons coconut oil EQUIPMENT Bowl Saucepan Whisk Small soup ladle Measuring cups PREPARATION If you like: make your own coconut milk first. - Creamy Coconut milk
The Thai kitchen uses coconut milk for a lot of dishes, like curries, sweets and so on. And because we have the coconut trees here on the premises in Paksong, it is easy for us to make our own coconut milk. Fresh and delicious! For our kitchen and for our guests as a great alternative for cow milk! Coconut milk Prep time: 10 minutes Total time: 30 minutes Serves: (depends on the size of your coconut) INGREDIENTS 1 coconut 1 1/2 2 cups of water EQUIPMENT Blender Cheesecloth Measuring cups Bottle or jar PREPARATION Sterilize your bottle or jar (hot water) METHOD Crack open the coconut using a hammer and split it into two. Carve the coconut meat out of the nut (we have a special tool for this). You can place it in the oven about 10 minutes at 180°Celsius to loosen up the flesh off the shell. Chop the coconut meat, add water and blend until a fine consistency. Use a cheesecloth, sieve the mixture and squeeze really tight to extract all the milk. Pour in your jar or bottle and store in the fridge until use The coconut mass that you have as a by product does not have a lot of flavor, but it still can be roasted and used as part of home made granola.. For guests who do not drink dairy, the Food Forest Kitchen Restaurant serves soy milk. Soy milk is easy to make and can be a base for many other recipes.. Soy milk Prep time: 10 hours minutes - Cook time: 30 minutes Serves: 1 jar 125 grams of soaked soy beans makes ca. 1 liter of soy milk INGREDIENTS 125 gram soaked yellow soy beans 1 liter hot water 1/2 teaspoon salt EQUIPMENT Saucepan Blender Cheesecloth Whisk Measuring cups Jar or bottle PREPARATION Soak the soybeans in boiling water overnight (the boiling water will prevent a beany flavored soy milk later) Sterilize your bottle or jar (hot water) METHOD Rinse the soy beans and remove any skins floating atop Drain the soybeans Blend the soybeans 750 ml of hot water until well blended and almost smooth Strain the blended mixture using a cheesecloth, keep the bean mass separate Pour the milk into a saucepan and add 1 cup or 250 ml of water Bring to a boil, stir and skim foam Cook over medium heat, stirring occasionally, for about 1 hour Add salt and boil another 30 minutes Let the soy milk cool down and pour in the bottle The bean mass that you have as a by product is called okara. it can be used for a number of amazing vegan recipes, like the Soy Yummies we serve in our restaurant, or vegan burger patties. - Rosella Jam
Rosella is also know as the fruit of a hibiscus flower. Taking off the red petals of the fruit/flower is a bit laborious, but it is surely worth it. The jam you can make from this is delicious, fresh and a bit tangy. At the Food Forest Kitchen Restaurant @Ecologicthailand we will serve it with breakfast when it is in season. Roselle Jam Prep time: 45 minutes (cleaning the Rosselle is labourious) - Cook time: 45 minutes Total time: 90 minutes Serves: 1 jar INGREDIENTS 200 gram Roselle petals 1/2 cup Water 1 1/2 cup Sugar EQUIPMENT Saucepan Blender Pan Whisk Measuring cups Jar PREPARATION Remove the petals from the Roselle Wash the petals till clean. Tear into small size. Sterilize your jar (hot water) METHOD Blend Roselle together with Water (1/2 cup) till fine Pour the blended roselle into the pan. Add the sugar and cook at medium low heat Stir till mixture combined. When mixture starts boiling, you will see small bubbles. Stir occasionally until mixture thickened. Check by pulling your spatula through the mixture in a line. The line can stay for a few seconds before disappear. Cook for another 20-25 minutes. Pour jam into clean jar and allow to cool before putting it in the fridge. The jam will thickens further after chilled. Serve and enjoy! Now you can make it at home! If you have a microwave you can make this delicious 'cup'cake in a matter of minutes! LEMON CAKE IN A MUG Prep : 2 min Cook: 1 min Ready in: 5 minutes Serves: 1 INGREDIENTS DRY INGREDIENTS 5 tablespoons flour 4 1/2 tablespoons sugar 1/4 teaspoon baking soda a pinch of salt WET INGREDIENTS 1/2 teaspoon white vinegar 1/4 teaspoon vanilla extract 2 teaspoons vegetable oil 2 1/2 tablespoons of fresh lemon juice 2 tablespoons of water EQUIPMENT Cup, suitable for microwave Spoon Measuring cups PREPARATION Squeeze a lemon for the juice. Please make sure the mug is big enough. The cake mix should not be over half of the mug when placed in the microwave. If more it will rise over the edge of the mug. A super easy, soft, light and fluffy flatbread recipe that is really simple and easy to make. We serve it at our restaurant as a snack with some delicious dips. On this website you will find some delicious dips too to go with your flatbread! VEGAN FLATBREAD Prep : 20 min Cook: 25-30 minutes Ready in: 1 hour Makes: 8 flatbreads INGREDIENTS 4 tablespoons yeast 1 teaspoon sugar 1 cup warm water 2 1/2 cup flour 2 tablespoons vegetable oil 1 teaspoon salt EQUIPMENT 2 bowls Baking pan Whisk Spatula Measuring cups Rolling pin PREPARATION There is no real preparation for this recipe. You just start and make the dough and bake your flatbreads! METHOD In a bowl: mix the sugar, yeast and warm water. Whisk together and let stand apart for 10 minutes Second bowl: mix the flour, the oil and salt. After 10 minutes add the yeast mix to the dry ingredients. Mix well and kneed until you have a nice dough. - No Knead Whole Wheat Vegan Bread
At our Food Forest Restaurant in Paksong we make and serve our own whole wheat bread, because bread is hard to get in this area. That is, vegan bread and whole wheat bread is nowhere to be found here. Our bread is lactose and egg free and done within an hour! VEGAN NO KNEED WHOLE WHEAT BREAD Prep : 20 min Cook: 40 min Ready in: 1 hours Serves: 1 loaf INGREDIENTS 4 cups (520 grams) whole wheat flour (or a mix with regular flour) 1 tablespoon (11 gram) yeast 1/2 teaspoon salt 2 teaspoons maple syrup or honey 3 cups warm water EQUIPMENT 2 bowls Bread pan Baking paper Whisk Spatula Measuring cups Tea towel Oven PREPARATION Add baking paper in your bread pan (cover the bottom and all sides) METHOD In a bowl: mix the flour, yeast and salt Second bowl: dissolve the honey in the warm water Add the honey water to the dry ingredients Mix (do not knead!) all ingredients together until you have a dough Place the dough in the bread pan and smooth it down Cover the pan with the tea towel and leave it for 20 minutes Now is the time to heat the oven up to 190 ° Celsius (convection ovens on 170°C) After 20 minutes the oven is on temperature and your bread has risen Place the bread in the oven and bake it for 40 minutes This recipe is made at the @THEFOODFORESTKITCHEN, the slow food restaurant of @ECOLOGICTHAILAND. - Delicious Thai sweet chili sauce
This Thai sauce is known as nam chim kai in Thailand. You will find it in every supermarket in the Asian section, but it is surprisingly easy to make yourself! If you make it yourself - like we do - there are no added preservatives or fatty ingredients in this homemade version, so it is also healthier. And since you control the ingredients, you also control the amount of sweetness and heat. At the Food Forest Kitchen @Ecologicthailand we serve it as a condiment with our lunches and diners. Thai sweet chili sauce makes a superb condiment for many Thai dishes and is excellent with chicken and fish as well as seafood. It is also wonderful as a marinade for grilling or as a dip for finger foods. Recipe Thai sweet chili sauce Prep time: 30 minutes Cook time: 15 minutes Total time: 45 minutes Serves: 1 liter INGREDIENTS 2 ½ cup water 1 ½ cup lime juice (or rice vinegar) 2 cups sugar cane sugar 5 teaspoons freshly grind ginger 3 teaspoons freshly grind garlic 2 teaspoons freshly grind chili pepper (or 2 teaspoons dried chili powder) 1 tablespoon tomato ketchup (we have a recipe of that too!) 1 tablespoon cornstarch EQUIPMENT Big pan Mortar and pestle (or handblender) Whisk Spatula Measuring cups Sterilized glass jars for storage PREPARATION Sterilize your jars with hot water Grind the ginger, garlic and chili you can use a mortar and pestle or a hand blender. METHOD Pour water and lime juice (or vinegar) in the pan Bring to a boil over a light heat Stir in the sugar, ginger, garlic, chili and tomato paste . Stir to dissolve Simmer for 5 minutes Mix the cornstarch with a bit of cold water Stir in the cornstarch a teaspoon at the time, and let it simmer. Add more cornstarch if needed, until the acquired thickness is reached. Remove from heat, let it cool down Store in jars NOTE: You can of course change the amount of sugar and/or chili if you want a more or less spicy or more or less sweeter sauce.
