- Make your own Thai Mango Sticky Rice (Khao Neow Mamuang)
Mango sticky rice is a traditional Thai dessert made with sticky rice, fresh mango and coconut milk, and eaten with a spoon or sometimes the hands. Even though the Paksong area, where Ecologicthailand and the FoodForestKitchen restaurant are located, does not have mango, we can get the mango when in season on the market. We can then make the most famous Thai dessert: Mango Sticky Rice! MANGO STICKY RICE Prep Time: 10 minutes - Cook Time: 20 minutes - Additional time for make the sticky rice 12 hours - Time for cooling down the rice: 1 hour - Total time 1 hour - 30 minutes - Makes: 4 portions INGREDIENTS 1 1/2 cups of sticky rice 1 ½ cups coconut milk 1 cup sugar ½ teaspoon salt for the sauce: ½ cup coconut milk 1 tablespoon sugar ¼ teaspoon salt 1 tablespoon corn starch 3 medium, ripe mango's 1 tablespoon toasted sesame seeds (optional) EQUIPMENT Measuring cups A steamer for the rice One of those lovely bamboo rice steamers, or a sieve A pot for steaming the rice 2 bowls 2 Saucepans PREPARATION Make your sticky rice Make your coconut milk Peel and slice the mango Toast the sesame seeds Make the sauce METHOD Add the sticky rice to a bowl In the saucepan, mix together 1 1/2 cups coconut milk, 1 cup sugar, and 1/2 teaspoon salt in a saucepan over medium heat. Bring to a boil; remove from heat. Stir the coconut milk mix into the steamed rice. Cover and allow to cool for 1 hour. Serving sauce: Mix 1/2 cup coconut milk, 1 tablespoon sugar, 1/4 teaspoon salt, and the cornstarch in a saucepan Bring to a boil. Turn of heat, set aside SERVING Place the sweet sticky rice on a serving dish. Arrange the mango's on top of or next to the rice. Pour the sauce over the mango's and rice. Sprinkle with sesame seeds. The Food Forest of the Thai Child Development has quite a number of banana trees. And banana trees are used in many ways in our restaurant: the leaves as table decoration and as packaging for take away lunches, the stem for curry, the flower for a salad, the young green bananas as a vegetable and of course the ripe bananas as fruit or as ingredient for this delicious vegan banana smoothie. - Spicy fruity salsa with Mango plum
What to do if there is a lot of fruit around because of harvesting season. We make jams of course, and chutneys and every now and then we make a salsa. Like the Fruity Mango Plum Salsa. At the Food Forest Kitchen @Ecologicthailand we serve it with our home made flat bread as a entree or as a snack. MANGO PLUM SALSA Prep time: 2 minutes Cook time: 5 minutes Total time: 7 minutes Serves: 1 cup dipping sauce INGREDIENTS 7-8 ripe mango plums Salt to taste 1/2 teaspoon chili powder 1 tsp chopped coriander. EQUIPMENT Bowl Knife PREPARATION Skin the mango plums Chop the pulp to 1 centimetre pieces Chop the coriander METHOD Mix the mango plum pulp, the salt, chili powder and coriander together in a bowl. Kumquats are the smallest citrus fruit that we grow on the premises of the Thai Child Development Foundation and Eco-Logic Thailand. We have quite a number of trees that produce these lovely sweet and sour tiny fruits. - How to make Thai Sticky Rice
In Thai, sticky rice is called khao neow and it eaten in combination with satay, grilled chicken, Som Tam salad and as dessert with mango. Sticky rice is a type of rice that is extremely sticky – in fact when you pick it up with your fingers, it will stick to your fingers. It is prepared different from regular rice: it is steamed. Here you can see how and make your sticky rice at home. THAI STICKY RICE Prep Time: 2 minutes - Soak the rice overnight - Cook Time: 15 minutes - Total Time: 12 hours 20 minutes for preparing - Makes: rice for 5 people INGREDIENTS The best way to make it, is to soak raw sticky rice in water overnight, allow it to sit, then steam it for about 15 minutes. You'll have beautiful fluffy and delicious sticky rice. water to soak rice 1 cup sticky rice EQUIPMENT Measuring cups A steamer for the rice One of those lovely bamboo ricesteamers, or a sieve A pot for steaming the rice PREPARATION The night before you want to cook sticky rice, take your raw sticky rice, place it into a bowl , submerge in water, and allow to soak at room temperature overnight. METHOD Bring a large pot of water to boil. Take the sticky rice out of the water (the grains will be softer and a bit swollen), and place into a bamboo steamer, or any type of steamer. Place the steamer over the pot with water, make sure the water doesn’t touch the sticky rice Cover the steamer/pot with a lid Steam the rice for 15 - 20 minutes on a medium heat. After 15 minutes take off the lid , because it will be very hot, use a spoon to taste your rice If the rice is soft and fluffy it is good for serving, otherwise steam it a bit longer. - Super Easy Vegan Pie Crust
For all those delicious Thai quiches and pies we serve at the Food Forest Kitchen restaurant we use this vegan pie crust as a base. Easy to make and a great base for pumpkin pie, banana pudding pie, papaya pudding pie. Make the crust big or make a number of small ones. The crust can be pre-baked and kept in the freezer if you want to have some in stock. VEGAN EASY PIE CRUST Prep : 15 minutes - Pre-bake for a cold filling: ca. 40-45 minutes - Pre-bake for a quiche or pie: 6-8 minutes Bake with pie: : 40-45 minutes - Ready in: 1 hour - Makes: 2 medium pie crusts INGREDIENTS 1 1/2 cup of flour 1/2 teaspoon of salt 1/2 cup of coconut oil 4-6 tablespoons ice cold water EQUIPMENT Bowl for mixing Pie pan Fork Measuring cups Rolling pin Baking paper (big enough to fit in your pie pan) PREPARATION Place a cup of water in your freezer to make sure it is ice cold before making your crust (5-10 minutes will do) Preheat your oven to 180 ° Celsius METHOD Mix the flour and salt Add the oil to the mixture Use a fork to mix all together; the mix will look like fine crumbs Stir in 1 spoon of ice cold water, mix Add the water, spoon by spoon while mixing, until it holds together and the dough is forming Continue mixing, use your hands to make the dough Roll the dough into a ball Spread the baking paper with some flour on your counter Use a floured pin (or your hands) to flatten out the dough to the size of your pie pan Transport the dough (and the baking paper!) to your pie pan Press the dough up to the sides Poke some holes on the bottom with a fork Pre-bake for 6-8 minutes if you want to use it to make a baked pie or quiche. HOMEMADE PUMPKIN PIE SPICE Prep time: 5 minutes - Cook time: 5 minutes - Total time : 10 minutes - Makes 1/2 cup of spice INGREDIENTS 3 tablespoons ground cinnamon 2 teaspoons ground ginger powder 2 teaspoons ground nutmeg 1 teaspoon ground cloves EQUIPMENT Bowl Whisk or fork Airtight container PREPARATION None METHOD Add all of the ingredients to a mixing bowl and mix until combined. - Vegan Pad Krapao: the famous Thai Tofu Basil recipe
Anybody who has been to Thailand has had Pad Krapao, probably with chicken and an egg (kai dau) on top. We serve the vegan version, without the egg. A tasty, traditional Thai recipe with Thai Basil from our garden and locally made tofu. Done in 15 minutes, this is a fast recipe to put on your dinner table! VEGAN PAD KRAPAO - TOFU BASIL DISH Prep Time: 5 minutes - Cook Time: 15 minutes - Total Time: 25 minutes Makes: 4 portions INGREDIENTS 500 grams of firm tofu 2 tablespoons vegetable oil 1 tomato, diced ¾ cup green beans cut to ½ inch long pieces ½ medium onion chopped 1 cup Thai holy basil salt & pepper to taste Sauce Ingredients 3 tablespoons soy sauce 2 ½ teaspoons brown sugar 4 cloves garlic chopped ¼ teaspoon ginger grated ½ teaspoon Thai chili pepper flakes optional if you like it spice. You can also add Thai chili peppers instead. EQUIPMENT A wok PREPARATION Dry the tofu and crumble it with a fork or your hands Season your tofu with salt & pepper to taste. Cut the beans Chop the onion Dice the tomato Remove the basil leaves from their stems and wash them (don’t cut them) Chop the garlic Grate the ginger Mix all ingredients for the sauce together METHOD Add the ground tofu to a hot pan with oil and saute until it becomes dry, about 5 minutes. Add the sauce, green beans, and onions to the pan and saute everything together for about 5 minutes or until the vegetables are cooked but still crispy. Add the tomato and cook for 2 more minutes Turn off the heat and stir in your Thai basil leaves and mix it together. NOTES Store leftovers in an airtight container in the fridge for up to 3 days You can use the left overs to make a Thai Pad Krapao Pizza! Of course it is vegan, made with all fresh produce from our garden. The (vegan) crust is home made too of course. The most amazing variation to a pizza you will eat! VEGAN THAI RED CURRY PIZZA Prep : 20 minutes - Cook: 25-30 minutes - Ready in: 1 hour - Makes: 1 big pizza INGREDIENTS Pizza dough Sauce Ingredients 1/8 cup coconut milk 1/2 tablespoon home made red curry paste 1/2 tablespoon brown sugar 1/8 teaspoon red chili pepper flakes (if you like it spicy) Topping Ingredients 1/8 cup tomatoes, diced 1/8 cup onion, diced 1 tablespoon cilantro, minced 1/2 tablespoon spring onion, chopped 1/2 cup homemade soy spread cheese Some bean sprouts 1/2 tablespoon cilantro, minced 1 tablespoon crushed, unsalted peanuts EQUIPMENT Pizza pan Saucepan Bowl Whisk Measuring cups Rolling pin PREPARATION Preheat oven to 180° Celsius Make the Pizza dough Sauce Make the coconut milk Make the red curry paste Mix all the ingredients for the sauce in a bowl, set aside Topping Dice the tomatoes Dice the onions Mince the cilantro Chop the spring onion Make the soy spread cheese Make your bean sprouts Mince the cilantro Crush the peanuts METHOD Roll out your dough into the pizza-pan Pour the sauce over the pizza and spread out evenly Add the toppings on. Reserve some of the spring onion, and all of the bean sprouts and peanuts for the very end. Place your pizzas in the oven for 30 minutes or until the crust starts to brown. Let the pizza cool for a bit, sprinkle the rest of your cilantro, spring onion, peanuts and beansprouts over top. Lassi is a popular traditional yogurt-based drink that originated in India. At the Food Forest Restaurant we use our own home made yogurt and the fresh fruit- and even with vegetables and herbs - from our gardens and food forest to make this amazing thirstlessing healthy drink. Here is the recipe to make the plain yogurt lassi. VEGAN PLAIN LASSI Prep time: 5 minutes Cook time: 5 minutes Total time: 10 minutes Serves: 2 glasses INGREDIENTS - INGREDIENTS 1 ¾ cups home made yogurt 6 cubes ice, crushed 1 ½ cups ice water 2 teaspoons honey 1 pinch salt Mint leaves for decoration EQUIPMENT Blender Glasses PREPARATION Make the yogurt Crush the ice Cool the water METHOD In a blender, blend the yogurt, ice, water, honey and salt until mixture becomes frothy.
