- Smooth Banana Cup Cake
This amazing banana cup cake is one of our favorite cakes in the Food Forest Kitchen Restaurant @Ecologicthailand! Really easy to make, no eggs, no dairy, the most delicious and moist chocolate cake. Now you can make it at home! BANANA CUP CAKE Prep : 10 min Cook: 35 min Ready in: 45 minutes Serves: 12-14 INGREDIENTS DRY INGREDIENTS 1,5 cup flour 1 cup sugar 1 teaspoon baking soda 1/2 teaspoon salt WET INGREDIENTS 1 teaspoon white vinegar 1 teaspoon vanilla extract 5 tablespoons vegetable oil 4 medium sized, ripe bananas, pureed 1/2-1 cup of water EQUIPMENT paper cup cakes bowl Spoon Measuring cups Oven PREPARATION Preheat the oven to 180 ° Celsius METHOD Mix the dry ingredients in the mug Make 3 depressions in the mix (2 small depressions and 1 large depression) Add oil in the large depression Add vinegar in one of the small depressions Add vanilla to the other small depression Pour banana puree and water over everything Mix it all together until smooth (your batter should be like thick pancake batter, add more water if needed) Pour in your paper cupcakes, fill half way Place in the oven Bake for ca. 25 minutes Check with a toothpick if your cakes are done (the toothpicks should come out clean) This recipe is made at the @THEFOODFORESTKITCHEN, the slow food restaurant of @ECOLOGICTHAILAND. - Mango Chutney
Even though mango is not a local product here in Paksong, we do get some at the local market sometimes, when it is mango season, To make mango with sticky rice for example (check the recipe here) and also to make mango chutney. A condiment that is a delicious extra at our buffet table. Or use it as a spread with our flatbread. MANGO CHUTNEY Prep time: 15 minutes - Cook time 1 hour - Makes 6 small jars INGREDIENTS 2 cups sugar 1 cup white vinegar 1 kg Mango 1 medium onion 1/4 cup of grated fresh ginger 1 garlic clove 1 teaspoon mustard seeds, whole (if you do not have mustard seeds, you can replace it by a teaspoon of mustard) 1/4 teaspoon red chili pepper EQUIPMENT Stove Big pan Wooden spoon Blender/hand blender Airtight Jars for storage PREPARATION Peel and cut the mango Chopped the onion Grate the ginger Mince the garlic Sterilize your jars with hot water METHOD Make a syrup from the sugar and vinegar: combine in a pot, bring to a boil, stir until the sugar is dissolved Add the remaining ingredients and simmer, uncovered until syrupy Let thicken slightly for 45 minutes to an hour, stir occasional Pour into jars Let cool down before storing This recipe is made at the @THEFOODFORESTKITCHEN, the slow food restaurant of @ECOLOGICTHAILAND. VEGAN COCONUT BANANA GINGER SMOOTHIE Prep time: 5 minutes Cook time: 5 minutes Total time: 10 minutes Serves: 1 glass INGREDIENTS 1 1/4 cup coconut milk 1 frozen banana 3 crushed ice cubes 1 tablespoon fresh ginger, EQUIPMENT Blender Glasses PREPARATION Freeze the banana (remove peel before freezing) Make your coconut milk Chop the ginger Crush the ice METHOD Put all ingredients in blender and blend until smooth. Fresh, light, lovely for a hot day in Paksong, or wherever you are. The taste of lime combined with natural honey makes this wonderful smoothie. Easy to make, easy to drink, easy to enjoy the taste and smell of this summer drink. LIME SMOOTHIE Prep time: 5 minutes Cook time: 5 minutes Total time: 10 minutes Serves: 1 glass INGREDIENTS 1/2 cup of fresh lime juice 1 1/2 cups crushed ice cubes 1 tablespoon honey 2-3 large mint leaves EQUIPMENT Blender Glasses PREPARATION Squeeze your lime Crush the ice cubes Pick the mint leaves METHOD Put all ingredients in blender and blend until smooth. - Banana Mug Cake
At 'the Food Forest Kitchen' Restaurant we bake our delicious vegan cakes in the oven, but what if you want just 1 cake?? If you have a microwave you can make this delicious 'cup'cake in a matter of minutes! BANANA CAKE IN A MUG Prep : 2 min Cook: 1 min Ready in: 5 minutes Serves: 1 INGREDIENTS DRY INGREDIENTS 5 tablespoons flour 4 1/2 tablespoons sugar 1/4 teaspoon baking soda a pinch of salt WET INGREDIENTS 1/2 teaspoon white vinegar 1/4 teaspoon vanilla extract 2 teaspoons vegetable oil 3 tablespoons of pureed banana 1 1/2 tablespoons of water EQUIPMENT Cup, suitable for microwave Spoon Measuring cups PREPARATION Puree 1 ripe banana Please make sure the mug is big enough. The cake mix should not be over half of the mug when placed in the microwave. If more it will rise over the edge of the mug. METHOD Mix the dry ingredients in the mug Make 3 depressions in the mix (2 small depressions and 1 large depression) Add oil in the large depression Add vinegar in one of the small depressions Add vanilla to the other small depression Pour water over everything Add the banana puree Mix it all together until smooth Place the mug in the microwave Set the microwave on high and wave for ca. 70 seconds Use a toothpick to check if the cake is done (the toothpick is clean when it comes out) NOTE: Each microwave has a different way of baking, try out if the period of baking is longer of shorter for you. - Creamy banana pudding
Vegan banana creamy pudding is a delicious, jammy pudding. At the Food Forest Kitchen @Ecologicthailand we serve it in small shot glasses on a bed of cookie crumbles, and as a stunning delicious pie! VEGAN BANANA CREAMY PUDDING Prep : 10 min Cook: 20 min Ready in: 3 hours Serves: 8 INGREDIENTS 2 Tbs cornstarch 1/3 Cup of sugar 1 Pinch of salt 1 ½ Cup of coconut milk 1 tsp Vanilla 2 ripe Bananas A squeeze of lime juice. Mint leaves and/or a couple of slices banana for decoration EQUIPMENT Saucepan Whisk Spatula Measuring cups Hand mixer or fork Glasses for serving PREPARATION Puree the bananas with the hand mixer or fork Add a squeeze of lime juice to prevent discolouring METHOD Mix the cornstarch, sugar and salt in a saucepan Add the coconut milk slowly and whisk Place on a medium heat and keep whisking until the pudding starts to boil As it starts to boil,, lower the heat and continue cooking for 4 minutes whisking constantly When the pudding starts to ‘jiggle’, add the vanilla and the pureed banana.. Stir well and continue cooking for a couple more minutes. Scrape the pudding from the pan walls and stir through. Remove from heat and while hot spoon the pudding into the glasses Set for 2 to 3 hours in the fridge. Decorate with mint leaves and serve. Did you know…... More over: banana trees are incredible! This tree can be used for food and so much more! At the Food Forest Restaurant we use the leaves for decoration on the tables, to wrap our take away lunches in. The core of the tree is edible and is used to make a delicious curry. Last but not least: the flowers of the banana are beautiful and can be used to make an amazing salad!! And of course we can eat the banana's themselves, we have a variety of them in our food forest and they are used for making shakes, our world famous banoffee desserts, they can be made into chips and used as a vegetable when young and green. Every body knows the famous Thai banana pancakes! We also make pudding with banana's: as a dessert for “the Forest Food Kitchen” restaurant . We only use homegrown and local produce and make our own coconut milk! It is incredible to be able to walk out in our food forest and just pick a bunch of bananas from a tree or get a coconut to grade for making coconut milk! Fresh and pure nature! Delicious!
